A lot of people ask me if all I do is drink all day, and... yeah, I kind of do. Less so now that I have to do all of the bills (ugh) and accounting (ugh) and orders (that part is fun), but two big parts of this industry are recommendations and innovation, and you can't do either if you don't know what anything tastes like. That said, you can't get drunk on the job, so you'll be sent away right away if you come in for an interview and you suggest that. It's happened more times than it really should.

Anyway, I've been having fun. Different seasons call for different types of drinks (I'm brewing a chocolate stout made with Mexican chocolate for this winter, for example), and I think that's one of the reasons a bar might struggle now, as the market is more interested in unique experiences that they can't replicate at just any old place. The media likes to talk shit about millennials, but they know what they like.

This one is bourbon, Ras Al hanout, coffee, sweet vermouth, Ancho Reyes, flaming anise. And this is bourbon, cranberry juice, cardamom, Cherry Bark Vanilla bitters, a sprig of lavender.
