how do you get over a fear?

like if you don't like the dark you can get a night light and learn to be okay with it, right? or you think the old woman next door is an evil witch but you meet her and learn she just doesn't like balls flying into her yard so you play ball on the other side of your yard

but what if you think certain foods can kill you or others or are afraid of spiders? how do you get over those ones?
