Percy, who knew which person Lillie was assigned to save, was standing nearby, listening to the conversation. Once the "servant" grabs hold of her arm, he rushed forward, and in a polite way that tried to hide his anxiety, told the "servant", "As you've already observed, she is practically a youngling. Forgive her impertinence, I take responsibility for her. And since she's a youngling, she shouldn't be tasting the drink. Allow me - I'll be able to determine if it's to her friend's liking."

Meeting Lillie's eyes, he gives her a look that is meant to convey, It's alright, let me do this so you can go on and save her. He then carefully plucks the drink from Lillie's hand and, while looking at "the servant", takes a small sip before giving it back to her. Percy remembered the warning that was given over the Network, not to drink or eat anything at the ball, so he expects and accepts whatever reaction he gets.
