If you just want to starting reading the regular issues, the upcoming "Assault on New Olympus" story arc begins with a special prologue in November.

For trades, well, there's four of them at present, they're all good (Secret Invasion being my favourite; Dark Reign has the most relevance to the current story arc).

There's also the oversized hardcover which collects Incredible Hulk #106-112, Incredible Hercules #113-115, and the Hulk vs. Hercules: When Titans Collide oneshot.
