Do the people in these ports generally speak High English, or do they have their own?

And while I'm on that note, how many languages are spoken amongst the people on this ship? I'd like to learn at least one of them in the time I'm here.

It's one of the ones I know on paper, but it's not familiar enough to lipread and I'm not too sure about the pronunciation.

There's nothing wrong with learning slow. But if you don't have an interest, I won't be insulted.

Is the other language - the sign one - one of the languages that isn't spoken, then?

It's not so much slow as incredibly tedious to learn to pronounce things you can't hear. Aside from English the ones I can actually speak have a fairly predictable system of sounds but I still get things wrong. And learning to lipread a language that you aren't instinctively fluent in is very difficult as well. Reading and writing, that's just a matter of understanding the grammar and learning the vocabulary.

Non-verbal, yes. Hand shapes, positions, and movements, and facial expressions often add nuance.
