Herbed Chicken and Potatoes @ 11:37 am

Last night my partner and I were just wiped out, but I couldn't see doing another pizza strike at $30 when we're trying to conserve money. So I preheated the oven to 375F, got out the bag o'quick- frozen boneless-skinless chicken thighs, put six of them in the bottom of a shallow Pyrex baking dish, and made some magic.

Herbed Chicken and Potatoes

6 medium boneless-skinless chicken thighs, still frozen (important!!)
1 medium onion, diced
3 cloves garlic, chopped
6-8 small new red potatoes, cut in eighths
Olive oil
1 teaspoon ground thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper

Preheat oven to 375. Coat chicken pieces with olive oil; place on bottom of shallow baking dish. In bowl, combine onion, garlic, potatoes, about 1/2 cup olive oil, and spices. Toss to coat all veggie pieces with spices and oil. Pour into baking dish to cover chicken pieces. Lightly salt and pepper over the top of the whole thing; put in preheated oven.

Bake for 25 minutes or so, or until chicken runs clear when stabbed with a fork. Serves 2. You can, of course, add other veggies, but I was short on time and long on tired, so I just went with what was easy to grab.

I'm making several asylums to parallel the ones I enjoyed on LJ. Please feel free to post recipes, recipe questions, general cooking questions, baking questions, photos of your food (as long as it's behind a cut tag, please, to spare people's bandwidth), questions about kitchen equipment, funny cooking stories, anything as long as it has something to do with cooking and isn't a gross-out story. To start things off, I'm going to share my chicken mushroom curry recipe which I perfected the other night and which met with approval from my East Indian friend. Note the tags for this post: all the main ingredients, the prominent spice or spices, the cookware if applicable, the type of cuisine - all of those are tags which are appreciated in any post.
