I've been harvesting some really first rate artichokes this fall.
It's funny. When I work the market, people say they love artichokes, but it seems like no one knows how to cook them. Here is my fool-proof recipe. (I mean, I can make them, and I can't cook.)
Trim the stem and pull off the bottom layers of leaves. Run water through the choke to clean between the leaves.
In a steamer pot, add a few inches of water, sliced lemon (or lemon juice), Italian herbs, garlic cloves, salt and pepper. Boil and then lower the heat. Steam the choke for about an hour, depending on the size. You can tell it's done when the leaves peel off easily.
I make the dip in the microwave. In a small bowl, put in butter, chopped garlic, and I put some Italian herbs in, too. Nuke it for 10 seconds, or a little longer, until the butter is liquified. Take it out, add some lemon juice.
Then you just peel the leaves and dip them in the butter, and you eat them by scraping off the fleshy part with your teeth. You can't eat the whole leaf, at least not until you get to the center.
Don't eat the spiny part in the center. You have to scoop that out. Trust me.
