If Dumbledore were around by then, I can hardly think he would neccesarily go against Snape. He just wouldn't outright defend him like he did before. It would have to be the portrait we're talking about by then, though, since Dumbledore would be dead.
As for proof of his loyalty, I once theorised that if Snape had gotten a chance to find Harry before Voldemort killed him in the Shack, he'd have proven his loyalty to Harry by conjuring his doe. Could he have done this, perhaps, in this situation, to back up his so-called "fabricated" memories? Would they even know what that would mean? Maybe I'm giving them too little credit. I'm just thinking of Harry's hearing.
And then there's Harry. It would seem uncharacteristic for him to vouch for Snape (if he did, that is) if an outsider looked at it. Surely he'd have good reason to do so if he were to back Snape up.
Meanwhile, how painful would it be for everyone to know these private matters about him. Especially Harry. Imagine how you'd feel watching the boy talk about such things as that. I'd be inwardly squirming, averting my eyes...
