the end of last year works perfectly! i think that was the time most ideas were coming together and she came into possession of the diner. definitely! the classes are on wednesdays when the diner is closed and there's a schedule with local chefs or amatuer cooks who volunteer their time to teach in compliance to some guidelines. so certain slots/time of the day will host the different groups. sometimes, as a plan there'll be a special workshop on like sun or monday when the diner is closed too.
i am! her former assistant ~stresstest who's now one of the acting managers of her lounge, has a spotty past. so she's all about giving second chances to help prop them up to do better. i think some of her staff may have had troubled pasts and has done similar so it wouldn't have been a big issue for looking out for the person who was in need of employment. like she could've brought them on to the diner when it started opening after their probationary period?
