The idea that a zombie eats human flesh or brain matter is a purely fictional invention and the zombies in movies and books are only superficially related to the Haitian Vodun - in fact, George A Romero is generally considered to be the inventor of the flesh-eating undead monster that most people imagine when they hear the word zombie. It's similar to the image of Dracula as a capeclad Romanian Count - although the concept of vampires and vampirism is present in almost all folk lore the common idea of a vampire didn't exist before Bram Stoker's Dracula in 1897.
