Even if he had managed to startle her, she wouldn't have attacked. Sookie isn't as impulsive or quick to leap to her own defense as she was back in Bon Temps. There's less of a need to here, and she really doesn't want to get saddled with one of the wardens' ridiculous punishments for burning holes through the maze.
