Recipe: Mama C's Chicken and Dumplings, Oatmeal Cake
Title: Hang 'em High

Excerpt: Belladonna Creek was a tiny, two-horse town that only existed because of a lazy tributary curling off the Colorado River in Arizona. The watershed flooded part of the valley it rested in, leaving behind scrub and grassland which was perfect for grazing herds of cattle and sheep. The main town had only one street, lined by a grand total of eight buildings, two of which were dedicated to horses. The outlying lands belonged to ranchers and farmers, the biggest of which belonging to the Potters and the Malfoys. The town was a stop on a stage coach route running towards Phoenix, it had its own bank and post office, and it had one of the best Back East educated doctors for twenty miles.
Which the whole town was grateful for, Dominic Prince thought dryly. Especially when its fool Marshal got himself shot. Again.
Commentary: This story was all Diz's fault. :D She prompted me with Snupin Cowboys, and this is what came of it. These two recipes are down home, simple country recipes that cowboys would love.

Mama C's Chicken and Dumplings
Ingredients
3-4 chicken breasts, depending on the number of people you want to feed
Chicken Bullion cubes (your favorite brand is fine)
1 can of Grand's biscuits (believe me when I say, these ARE the best for the recipe)
milk
butter
salt & pepper
1. In a large soup pot, boil the chicken breats until they are completely done, using just enough water to cover the chicken. Once the chicken is done, remove it from the pot, reserving the water.
2. Cut the chicken into bite sized pieces or pull it apart into pieces that are easily eaten, your choice. Add these pieces and the Chicken Bullion cube back to the pot and turn the heat to medium.
3. Open the can of Grand's biscuits and cut or break them into pieces, dropping them into the pot of simmering stock. They will cook and work as a thickening agent.
4. Add butter and milk gradually until you achieve the desired color, consistency and taste. You're looking for a buttery-gold gravy that tastes like butter and chicken. Add salt and pepper to taste.
Goes great with apple sauce and suckotash.
Oatmeal Cake
Ingredients
1 Cup of water
1 Cup of oatmeal (quick, but not instant)
1 stick margarine
1 cup of white sugar
1 cup of brown sugar
3/4 teaspoon cinnamon
1 teaspoon baking soda
2 eggs
1 1/3 cups flour
1/2 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon nutmeg
1 cup raisins
1 cup brown sugar
1/4 cup evaporated milk
1/2 cup chopped nuts (pecans usually)
1/2 stick melted butter
1 cup coconut
1. Combine 1 cup of water, 1 cup of water, and 1 stick of margarine in a pot and melt together, stirring. Once all ingredients are thoroughly mixed, set aside and cool to lukewarm.
2. While the oatmeal is cooling, combine 1 c white sugar, 1 c brown sugar, 3/4 tsp cinnamon, 1 tsp baking soda, 2 eggs, 1 1/3 c flour, 1/2 tsp salt, 1 tsp vanilla, 1/2 teaspoon nutmeg and 1 c of raisins in a large bowl.
3. Add oatmeal mixture into the bowl and combine (the batter will not be smoothe).
4. Grease and flour a 9x13 cake pan. Pour in batter and bake at 350 degrees for about 35 minutes. To test for doneness, use the tooth pick method (if the toothpick comes out clean, it's done!)
5. While the cake is baking, mix 1 c brown sugar, 1/4 c evaporated milk, 1/2 cup chopped nuts, 1/2 stick melted butter, and 1 c coconut. Set aside.
6. Once the cake has finished baking, spread the coconut mixture evenly over the entire cake. Put the cake under the broiler until toasted. DO NOT WALK AWAY. This will only take a minute or two.
Wonderful with milk for breakfast. :D
