There are four main types: 1. Kansas City: Thick BBQ sauce, typically made with ketchup and vinegar base and lots of seasonings. 2. Memphis: Thin BBQ sauce, same base as Kansas City but typically has less extra seasonings than Kansas City. Has a 'ketchup' taste to it. 3. Carolina: Mustard-based OR ketchup and vinegar based but with a tangy flavor. 4. Texas: Thin sauce (we call it mop sauce) used during cooking to baste or marinate. Typically made from meat drippings and hot sauce with seasonings for flavor.
Texas is the only style of BBQ that doesn't serve the meat with a cup of BBQ sauce.
