Usually, when a person took time for lunch, they set their work aside and enjoyed the break. That was, of course, most people, and Spock very obviously didn't fit into that category. Generally speaking, the arrangement worked well enough for him; he took a quick meal, then sat and caught up on paperwork. No one bothered him.
Except for today.
