While Beth's initial reactions to Signe might be something along the lines of "WTF DWARF MAGE???" and "OMG APOSTATE???", she certainly doesn't see it in a negative way. It's really amazing to her, since Signe's entire existence was always taught to be impossible, and that's clearly no longer true. She halfway wants to take her to the Circle to show her what it's like there, but then realizes that it's probably not such a great idea, because the Chantry's kind of miffed at Orzammar for doing it behind their backs in the first place. Beth also remembers Dagna (who is the only other dwarf she has ever met) from when she came to the Tower, so the fact that she's related to Dagna and knows what became of her after she left is also reeeeally interesting.
So, basically, Beth's really fascinated with Signe just...being, and would love to know everything she knows, and share as much information as she can about her own mage training. And, not being very good at joking or having a sense of humor, will probably be a total Buzz Killington and reassure her that the sky is in no way a threat.
