There were things that Hannibal didn't know about, due to the time he'd come from and the still limited - according to Simon - techniques and technologies of this current time.
And maybe there was a portion of Hannibal that was finding amusement in Simon and himself becoming so 'chummy'. It was a revenge of it's own, and took away the desire for any physical repercussions to what Simon had done. Simon had to think about these things after the fact, and that had to be torment enough.
