This won't be a comprehensive list, of course, as I'm not acquainted with everyone, but I'll do my best.
With regard to potions, I'd recommend Lily Potter. As for Transfiguration? James Potter or Sirius Black. I'd say for Charms you'd do well with Bill Weasley. I know Charlie Weasley's adept in Care of Magical Creatures. We've got several aurors, too, and any of them would likely be formidable Professor's for a wide array of these subjects. Nymphadora Tonks and Emmeline Vance, in particular.
Albus, I believe, has mentioned muggle studies in the past but I'm not 100% sure on his specialties. I know he teaches mathematics at the same school as I do. So it seems we are only really lacking a strong candidate for Astronomy and Herbology. Any of us could go over History of Magic with relative ease.
