I imagine Poe was definitely there for opening night. All freshly trained and doing his best not to pour the wrong thing into the wrong drink, because honestly he doesn't know what almost any of these liquors are and has had to have a crash course. Oops.
It'd be the first time they met in person, right? So maybe she stopped at the bar and he introduced himself at some point while serving him a drink and it resulted in like a "Oh hey!"
