I'm not sure if these are what you're asking for, but here you go.

To make a mock up of an iPhone text message conversation, try the generators linked in response to this question.

There's a Droid with slide-out keyboard here as an editable template. Ditto for the touchscreen Droid here and iPhone 4 here.

You can find more media/phone type templates under the layouts: media tag.
