Joey didn't think she needed the air at all. Ella fit into this vintage world like soft lighting and the smiley soda ads he saw on the walk over. She fit in so much so that he wouldn't have believed she came from elsewhere if he hadn't known better. He didn't take notice of the smaller things like the way her hair might have been styled just a bit different from the other girls, he didn't have a sense of style whether it involved hair or not. So he thought she fit here like just another card in a foxed deck.
So no, he didn't believe that she needed air, even if the tables were a little cramped and her fingertips were just a touch clammy from being inside those gloves for most of her stage shift. If anything, he thought she looked more at ease here than in any donut shop he'd sat across from her at. When Ella mentioned needing air, Joey knew that it was for his sake. He could feel the color in his face, and despite all of his trying, he couldn't quite get his fingers to unfurl from defensive fists.
"I'll come with you," he said of her feigned need for air, and he was grateful.
