Not saying they don't. Saying in my experience, with letters curated from writers, there's a difference. Old, written letters, for example, tend to consistently be longer. Reason for it is time required for responses, of course, but it changes the nature of letter writing. Lack of immediacy. Historically, letters would often be written chronologically, with days between entries, almost like journals. They were more descriptive about the day's events, since phones weren't an option. [A chuckle to himself.] Et cetera. But you don't need to be a professional to be good. Most talented writers and artists weren't considered successes in their lifetimes. ["Anything" is certainly broad.] Makes sense. Not much the police or military can do about some of our current problems.
