*rock on down to the kitchen and make me an egg*

I posted about chicken salad to go with my roasted cauliflower soup tonight and [info]fun_demented asked for my recipe. It's very simple and very basic, but we eat it a lot (lots of protein, low carb...just my thing) and it's something all three of us really, really like. It's sort of a made up recipe, based on lots and lots of them just like it and I'm not good about measuring, so I have to guess on that part.

Tweedy's Chicken Salad
2-3 chicken breasts, shredded or diced (I either roast bone-in breasts with lemon and rosemary or cook boneless breasts in foil with lemon slices and bay leaf)
about 1/3 cup mayo (I use light or fat free, they all taste the same to me)
about 2 tablespoons lemon yogurt (I shop at Kroger and they make a light yogurt that I like best)
lemon pepper to taste
Spike seasoning to taste
red or purple grapes, about a cup, sliced in half
a stalk or two (I like more, BK doesn't) celery, chopped finely
1/2 cup pine nuts, roasted on the stovetop for a few minutes, then cooled

Mix it all together! I just sort of adjust the amount of mayo to taste...be sure not to use too much yogurt or it's too sweet. It's really all just a matter of taste as to how much of each ingredient. I have been known to use apples instead of grapes and chopped walnuts instead of pine nuts, but I do this mix the most. :D

*hot and spicy fun*

So...it's been a LONG time since anyone posted a recipe here at creamsauce, so I'm going to post one myself. This is really not at all a *true* fandom asylum, but I really do enjoy sharing recipes and I'd rather share them with people I share other interests with instead of some recipe sharing site.

This is a pretty common recipe...I've seen versions of it ALL over the interwebs, but this is my take on it. I first made it a couple of months ago, just after I found out I had diabetes. I needed something for a potluck at work and wanted to make something with chicken, which is a great lean protein choice. I am a HUGE fan of buffalo chicken flavor, so this seemed like a good choice. As it turns out, EVERYONE (at least at my school) likes buffalo chicken and they gobbled this stuff up. I made it again right before Thanksgiving for another potluck and I had even more requests for the recipe than I did the first time. Another teacher told me today she's made it three times since I gave her the recipe. It's pretty good stuff, *AND* it's very low-carb.

Buffalo Chicken Dip
1 8 oz. package cream cheese (I use the fat-free kind)
1/2 cup bleu cheese salad dressing
1/2 cup Frank's Buffalo Wing Sauce
1/2 cup mozzarella cheese, grated
1 rotisserie chicken (I use mostly breast meat, but use whatever you like), skin removed and meat chopped or shredded

Preheat the oven to 350 degrees. Soften cream cheese and mix with the dressing, sauce and cheese in a glass dish. Stir in chicken and bake about 20 minutes, or until hot and bubbly. I serve it with tortilla chips for those who don't care about carbs and celery sticks for those of us who do!

Simple and delish...my favorite kind of recipe.

There was a discussion yesterday on [info]plasticine_star's journal that started out being about baby spinach and a recipe she could take to a party. It ended with me thinking about spinach and how much I love it and things I cook with spinach. So here are a couple of recipes. WARNING: These are NOT low fat, low calorie recipes. They're delicious, but I'd save them for special occasions!
