Pancake Palooza started as a kind gesture. When one of the military members broke down into a puddle of his own tears after a few too many pints, professing what he missed most about life aboveground was his mum's fluffy pancakes. Always one to try to cheer someone up and deliver excellent service, Jack made him a promise--drag your hungover arse back there at 0900, and he'd make him as many pancakes as he could fit in his stomach. Only the soldier brought his mates, who brought their mates, and a small breakfast turned into a wildly popular, packed brunch.
And so, Pancake Palooza was born. Every other month for the past six months, Jack set up his magically heated griddle down the entire length of the bartop and moved back and forth behind the bar with his chef's hat and "Snog the Chef" apron on for hours, pouring the batter from his mam's secret pancake recipe and flipping with dual-wielded spatulas. Today's batch all produced festive green pancakes, and when folks moved down the line and stacked as many as they wanted upon their plates, they had the option of stopping by a toppings table boasting various flavors of syrup (featuring Irish whiskey-infused this month along with regular and honey-maple), chocolate chips, various fruit, and whipped cream.
