[The struggling doesn't phase Eric int he least. Any damage Helix does manage to do to Eric heals literally half a second after that damage is done. After a thousand years as a vampire, pain is incredibly relative and this isn't it. Even if he weren't so focused on the way Helix's blood tastes or the way it makes him feel, he wouldn't be phased by the struggle. Sure, he could have glamoured Helix first, which is what he would have done back home, but that took too much effort and focus. Niether of those were very high on Eric's list of abilities today.
In the end, it is the way Helix's blood makes him feel that stops Eric. He's felt like this before. He was high on fairy blood and he'd killed Sookie's fairy godmother by draining her completely in a matter of moments. He doesn't want to kill anyone here, both because of the punishments that would be levied against him and because of the newly burgeoning humanity. Finally, he drops Helix, taking a step back as he wipes his mouth with the back of his arm.
