Those are ways Sebastian could answer. He doesn't. Ciel is right. There is no good counter-argument to his needing to prioritise Ciel's safety, and consequently his own ability to protect Ciel. Sebastian shuts his mouth, looking downright sullen, but he obediently grips the cane and heaves himself up, shakily, with Ciel's help. And of course, the second he's standing up he has to place a hand on the bloody kitchen counter again, because there the room goes topsy-turvy once more. Ugh.]
