As a judge, Tess is tough but fair. She gives each item its due diligence (even bad ones), trying a couple of bites of the whole composition and trying the individual components on their own.
Every team gets both complements and criticisms. It's super obvious by the way she's talking, though, that she marathons Chopped/Cupcake Wars/Iron Chef/etc.
