If, like me, you live somewhere where Naan is not a phone call away, you can do what we do and make your own. It really helps if you have a heavy-duty mixer with a dough hook, unless you happen to have a house elf or someone you can Imperius to do all the kneading for you. ;)
½ c. (120 ml) yogurt
½ c. (120 ml) milk
½ tsp. (2 ml) baking soda
1 tsp. (5 ml) sugar
4 TBSP. (55 g) Butter, melted and cooled
2 eggs, lightly beaten
2 packages (25 ml) quick-rising yeast
3 ½ c (448 g) unbleached white flour
½ tsp. (2 ml) salt
½ tsp. (2 ml) poppy or sesame seeds
Warm the yogurt and stir in the milk until thoroughly mixed. Remove from the heat and cool. (This can be done in the microwave.) Place the yogurt mixture in a heavy mixing bowl for a very heavy mixer, such as a Kitchen Aid. Otherwise, do this by hand. Add the baking soda, sugar, 2 tablespoons of the butter, eggs, and yeast. Mix until the yeast dissolves.
Stir in the flour and salt.
Using the dough hook for your electric mixer, knead the dough for 15 to 20 minutes, until smooth and elastic. If you’re doing this by hand, you may want to take turns with another person. It will take about 30 minutes if kneading by hand. Place the dough on the counter and cover with a large stainless-steel bowl. Let the dough rise until doubled in bulk, about 2 hours. The dough has doubled when it doesn’t bounce back when you poke it with your finger.
Dust your hands with flour. Knead the dough again for a few minutes and divide into 8 balls. Cover the balls with a towel and let them rest for 10 minutes or so. Roll each ball into a 10-inch (25 cm) pancake. Pull each pancake gently into an oval shape. Cover with plastic wrap for 20 minutes. Do not stack the pancakes as they will stick together.
Heat your oven to 450 degrees Fahrenheit (230 degrees Celsius), along with clay tiles for baking bread or an upside-down baking (cookie) sheet. (We use the baking sheet). Mix the remaining butter with the poppy or sesame seeds. Place a bit of flour on a small bread peel (or a cutting board) and place a loaf on the board. Brush the top with some of the butter and seeds and slide onto the tiles or baking sheet. Bake just until the bubbles that form on the dough turn a bit brown, about 4 minutes. Remove from the oven using the peel or tongs (careful not to tear the bread if you use tongs. Or you can use a hot pad and just pull it out with your hand. BE CAREFUL!) Brush the bottom of the loaf with a bit of water. Stack the loaves and cover with plastic wrap until serving time.
