He sneaks in with such stealth it's as if he appeared out of nowhere. He drinks in the room and it's occupants, memorizing everything. He brushes the dust off his purple vest and shakes his head. As he approaches the bar, he pulls two cards out of a pocket in his vest. He looks the man at the bar up and down, licks his lip, and lowers the two cards to the bar. One appears to be an average Joker card, the other, oddly, a recipe card.
"Steak and kidney pie. Takes a bit of preparation." He glances around. "I'll wait." With that, he hops up to sit on the corner of the bar, leaning against the wall.
2 c. flour 1/2 tsp. salt Ice water 1/2 lb. butter 2 lb. round steak, cut into cubes 2 - 3 lamb kidneys
Start pastry early in the morning. Mix flour and salt with enough ice water to make a ball. Turn onto the counter and leave under the bowl for 15 minutes. Roll out into rectangle and slice butter onto half of it. Fold over and roll gently; butter must not leak out. Fold into thirds and then in half. Roll in damp towel and refrigerate. Repeat this process every half to 3/4 hour until it has been rolled 4 times. Meanwhile brown steak cubes and lamb kidneys in fat. ( Take vein out of kidneys and slice them.) Cook for about an hour, then turn into a casserole. Top with pastry and bake about 45 minutes at 425 degrees until pastry rises and is golden brown.
