1-1/4 pounds apples - peeled, cored and finely chopped 3/4 cup and 3 tablespoons sugar 1/2 teaspoon ground cinnamon 1/8 teaspoon ground cloves 1/8 teaspoon salt
Place apples in a slow cooker. Combine sugar, cinnamon, cloves and salt; pour over apples and mix well. Cover and cook on high for 1 hour. Reduce heat to low; cover and cook for 9-11 hours or until thickened and dark brown, stirring occasionally (stir more frequently as it thickens to prevent sticking). Uncover and cook on low 1 hour longer. If desired, stir with a wire whisk until smooth. Spoon into freezer containers, leaving 1/2-in. headspace. Cover and refrigerate or freeze.
Hint: Depending on the sweetness of the apples used, you can adjust the sugar to taste.
Blueberry Pumpkin Muffins

Preheat oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners. Mix the flour, oats, sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until evenly blended. In a separate bowl, stir together the pumpkin, milk, egg, and butter. Gradually stir in the flour mixture, just until all ingredients are moistened. Fold in the blueberries. Spoon batter into muffin cups, filling to the top. Bake in preheated oven until tops spring back when lightly pressed, about 20 minutes.

DIRECTIONS Melt the butter in a large skillet over medium-high heat. Fry the ham on both sides in the butter until browned. Lay the sliced apple over the ham. Pour the syrup over the apples. Reduce heat to medium, and simmer, stirring occasionally until the apples are cooked through. Sprinkle with cinnamon, and serve immediately.
