Recipe: Pumpkin Chocolate Chip Cookies
serpenscript pointed me here, and I'm so glad she did! I love autumn.
I thought I'd share one of my favorite fall recipes, Pumpkin Chocolate Chip Cookies.
I start making these toward the end of October, and through November and December - friends start asking about them toward the end of September, all "You are making them this year, right??" *g*
2 cups flour
1 cup uncooked oats
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup soft butter or margarine
1 cup firmly packed brown sugar
1 cup white sugar
1 slightly beaten egg
1 teaspoon vanilla
1 cup pumpkin
1 package semisweet morsels
Preheat oven to 350 degrees. Combine first 5 ingredients and set aside. Cream butter, gradually add both sugars, beating until light and fluffy. Add egg and vanilla, mix well. Add pumpkin and flour mix alternately, mixing well. Stir in morsels.
Drop by tablespoonfuls on lightly greased (or nonstick) baking sheet. Bake 10-12 minutes or until they look done - they will still be soft on the top, but shouldn't be doughy/sticky still.
You'll need to let them cool a few minutes on the sheet before you take them off. They can fall apart unless completely cool, so I put them on a paper towel instead of a cooling rack. At least one will fall apart when you're moving them from the baking sheet - it's a good excuse to eat one.
They are soft cookies and can stick together when cool, so I usually put wax paper or parchment paper between the layers of cookies when I store them. Because one massive box-shaped cookie might seem fun until you have to figure out how to eat it. ;)
