Of course, now I have to wonder how this recipe would work with sage sausage. :3 (Around where I'm at, we're lucky in that we actually have all manner of different kinds of patty sausage we can get, including not only regular but sage sausage, extra spicy, etc. The fun of living in a heavily agricultural state :D)
