Chocolate Orange Cake (with no eggs)
"Why can't we use butter, milk and eggs? The depression ended years ago, Issac!"
"Ah, but this is the most excellent method of cake-making-- Do you know what's special about using no eggs, Miria?"
"No, Issac, what's so special about using no eggs?"
"No eggs means we can lick the bowl afterwards! Isn't that wonderful, Miria?"
"So wonderful, Issac!"
CHOCOLATE ORANGE CAKE
Ingredients
1 1/2 cups self-raising flour (or 1.5 cups plain flour + 3 tsp baking powder)
1/4 cup unsweetened cocoa powder
1/4 cup soft dark brown sugar, firmly packed
1 cup orange juice
5 tbsp oil
Method
1. Preheat oven to 200 C/ 390 F. Flour (or in my case, cocoa...) a deep springform 9" round pan.
2. Combine cocoa and flour in a large mixing bowl. In another bowl, combine brown sugar and orange juice.
3. Measure oil over flour, then pour over juice mixture. Combine well, then pour into prepared pan. Turn oven down to 180 C / 355 F.
4. Bake for ~45 minutes, or until a skewer inserted into the centre comes out clean. Open pan, and allow cake to cool on a rack.
Notes: This is adapted from a 'depression era' cake recipe, which used no milk, eggs or butter, but vinegar diluted in water rather than juice. My version produces a fluffy chocolate cake with a very subtle hint of orange, for around 54p per cake (~$1.28 USD).
Using white granulated sugar would make it a little cheaper; using fresh oranges (~3 will be needed) would allow you to add their grated zest into the cake for a stronger orange flavour but more than double the price.
