The emperor's breakfast: Peony's favorite banana-coconut bread (or muffins)
When Peony IX first took up residence in the palace in Grand Chokmah, the head chef inquired after his taste in food; it wouldn't do, of course, to displease a new emperor. Peony thought about it for a few seconds and then said, "Something tropical -- and no rappig," before utterly refusing to elaborate further.
The rappig part is easy enough to understand, given his majesty's taste in pets, but there was a good deal of speculation among the palace staff over whether his majesty was happy to be free of the frozen north of his youth, or if food from home would have brought back too many painful memories.
In any case, the chef produced this recipe to serve at breakfast, with spiced tea.
1 cup mashed bananas (about 3 of them; best if they're ripe enough to have some brown spots on the skins)
2 eggs
1/2 cup melted butter
1 cup sugar
1/2 teaspoon almond extract
1/2 cup shredded coconut
1 1/2 teaspoons baking powder
1 1/2 cups flour
optional:
chopped nuts
additional fruit (cherries, pineapple, berries)
Preheat oven to 350. Grease and flour a 9x5 loaf pan, if you're making this as a loaf, or put papers in your muffin tin.
In a large bowl, cream together sugar and melted butter until soft and creamy. Beat in the eggs, until the whole mess is frothy and light. Stir in the mashed banana along with the extract. Add coconut, baking powder, and flour. Add any optional ingredients last.
Pour into your loaf pan, or measure into 12 muffin cups -- they'll be quite full! -- and bake until a toothpick tester comes out clean. A loaf will probably need about an hour; muffins go much faster, possibly only 25 minutes or so.
Whatever you do, do not serve with rappig bacon.
