Celebrating

In celebration of the release of Pathfinder today, I am going to be making myself an indulgent little treat this afternoon. Chocolate and peanut butter and oreos, oh my! I thought I'd share the recipe here in case any of you want to celebrate with me at home. ^_^


Peanut Butter Oreo Chocolate Bark

Ingredients:

BOTTOM LAYER
24 whole Oreo cookies
1/4 cup melted unsalted butter

PEANUT BUTTER FILLING
1 cup creamy peanut butter
4 tablespoons butter, softened to room temperature
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/4 teaspoon salt

CHOCOLATE TOPPING
5 ounces semisweet chocolate, like Bakers or Ghirardelli brands

Directions:

1. Line an 8x8 or 9x9 square baking pan with parchment paper, with overlay on the sides. Spray with nonstick spray. Set aside.

2. Make the Oreo cookie crust by crushing the Oreos into a fine crumb using a food processor or blender. Mix the crushed Oreo crumbs and melted butter together in a large bowl. It may look like there is not enough butter, but it will come together. Place into the prepared baking pan, pressing the crumbs down into the pan to create a somewhat even layer.

3. In the bowl of a stand mixer or using a handheld mixer, mix the peanut butter, butter, confectioners' sugar, vanilla, and salt until the mixture is completely combined and smooth. Spread over the crumb mixture, smoothing the top with an offset or rubber spatula (sprayed with nonstick spray, for ease). Chill the bars for at least an hour, until the filling is set.

4. Melt the chocolate in medium microwavesafe bowl, stirring every 15 seconds. Or use a double boiler. Pour the chocolate over the peanut butter filling and evenly spread. Chill the bars in the refrigerator for at least an hour or until the chocolate topping has set. Remove bark from the baking pan using the parchment paper and cut into uneven pieces (or use your hands to break it up).

5. Store bark in the refrigerator.


Yum yum! :D

PATHFINDER released today!

Pathfinder is now available on Smashwords!!!! It will be available on Amazon Kindle as well very soon (Amazon takes a little longer to release their titles). I am so excited to have this book out there once again, especially as I am hard at work putting the finishing touches on Pathfinder 2.

I edited the story quite a bit for this newest edition, and expanded a couple of scenes. All together, there are about a thousand more words in this current version of the book, but there have been no substantive changes made. It's still the same story it was before.

The Ouroboros Prophecy

I just received the proof for the new release of my m/m scifi novel Pathfinder, which is nearly ready for publication! It turned out absolutely beautiful and I am so excited to share it. I've given the novel a thorough re-editing in anticipation of its debut with my new publisher. While it's the same general story as it was before, I ended up tightening it up quite a bit as well as expanding a few of the passages. All in all, there's about a thousand more words in this newest edition of the story.

I'm also excited about the release of Pathfinder 2: The Ouroboros Prophecy, which is following close on the heels of the original book. i don't have a finished proof yet, but it is very, very close to being done. I've added a sample from the story to the book's webpage if you'd like to take a peek at it:

I have a confession to make ...

I don't like Game of Thrones.

I get that it is a big deal and all, but I just can't get into it. Too many cliffhangers each week, too many characters to follow. Too much bloodshed and gore.

It is a damned shame because I love dragons. My fondest hope is that now that Game of Thrones has made them a thing is that someone, someday, will make a movie out of The Dragonriders of Pern books. Wouldn't that be amazing?

Does anyone else do this?

So I'm trying to meditate daily, for various reasons. However my monkey brain won't shut up, which I know is normal. But in between singing Grandma Got Run Over By a Reindeer to myself and thinking of what I have to get at the store I get glimpses of me doing stupid stuff. Like tripping and falling over my own two feet and laying dead with no one but the cat noticing.

Does anyone else do this, or is it just my brain doing it's best to distract me?
