Things To Make With Sesame Seeds [18 Aug 2009|01:07am]

I picked up a kilo of sesame seeds half price.

Things I could make with them (we have a neighbourhood party this weekend):

Sesame Tortillas:

1. Cut flour tortillas into wedges: place on ungreased baking sheet: bake in a hot oven for 3 minutes.
2. Remove from oven, brush with honey, sprinkle on sesame seeds
3. Return to oven, bake for 2 more minutes or until golden brown

Allow to cool (or the honey will burn your mouth!) and serve with thick yoghurt whipped with a little more honey for a dip.

Plus: They sound SO GOOD. Minus: They also sound pretty fiddly to make.


Sesame Pancakes:

1. Mix 1 cup sourdough batter with 1/2 cup of warm water, 1/2 cup of milk, 1 pinch salt, 1 cup sifted flour, and let stand
2. while lightly toasting a cupful of sesame seeds on an unoiled iron griddle
3. Tip the sesame seeds into a bowl, spread a little oil on the griddle
4. ...and fry up some tasty sourdough pancakes.
5. When they are done on the underside, sprinkle them with toasted sesame seeds, turn them over, and cook for another minute or two.

Plus: I could make these with buckwheat flour. That might be an idea. And serve them with sour cream. Minus: Somewhat fiddly. Plus, anything that has to be kept warm doesn't work for party.


Sesame Cookies:

Toast 1/3 cup of sesame seeds. Allow to cool. Whisk 1/2 cup of butter with 1 cup of brown sugar, then beat in 1 egg, 2 tbps milk and 1 tsp vanilla essence. In a separate bowl, sift together 1 cup of flour (self-rising or 1/4 tsp baking powder), 1 pinch salt, and the toasty sesame seeds. store). Whisk the flour/sesame seeds into the wet mixture. Drop the mixture by teaspoonfuls about 2 inches apart on to baking trays well-greased or lined with parchment. Decorate with a half-pecan and/or with a mix of black and toasted white sesame seeds. Bake in a hot oven until crisp and caramel brown - about 7 minutes. Let cool for 5 minutes on the tray, and then transfer to a rack to let cool completely.

Plus: Awesomely delicious! Minus: OH but that means I have to buy pecans, too.


Sesame Traybakes:

In a nonstick pan, melt 3/4 cup butter, stir in 1.5 cups brown sugar and 1.5 teaspoons vanilla essence. Remove from heat, stir in 2.25 cups rolled oats, 3/4 teaspoon baking powder, and 3/4 cup sesame seeds. Mix well till thoroughly blended. Press into a rimmed baking tray that is well-buttered, and bake for 7 to 10 minutes in a hot oven. Cool in the pan. Cut into bars.

Sounds excellent, and I may make these, but they also sound too healthy for 'party'. Though I suppose I could then add caramel and then chocolate to the traybakes....


Dates With Sesame Seeds:

Toast 1 cup sesame seeds till brown on an unoiled iron griddle. Fry 1/2 cup blanched almonds until golden brown. De-seed 2 lbs of soft dates and make into a dough flavoured with 1 tblspn ground cardamom seeds. Mould the date dough into a datelike shape and stuff with a fried almond. Roll in sesame seeds. Repeat until mad or run out of date dough.

Plus: Delicious, as far as I can taste the flavours in my mind: Minus: People would ask "What is that?" and then probably not eat it, or try one to be polite. Also, even more fiddly than the tortillas-with-sesame-seeds.


Sesame and cheese scones:

Make scones with 1/3 cup of toasted sesame seeds and 1/3 cup grated cheese to 1 cup flour. Decorate the top of each scone with more grated cheese and sesame seeds before baking.

Simple, delicious, yet again probably not quite 'party'. Mind you, I'd like them.


Sesame bread:

Make bread. Use 1 cup of sesame seeds to 1 cup of wholemeal flour and 1 cup of rye flour plus sourdough batter plus blackstrap molasses. Use the toasted sesame oil. Form into loaves after the first rising and brush with oil then press into a plate of toasted sesame seeds. Let rise and brush again with oil to keep the seeds on when the loaf bakes.

I'm definitely making this for me, whatever the loaves look like for the party. Minuses: none that I can think of.

Yesterday I had to wing something edible from whatever I found in the fridge, and I hadn't got the things to do one of my standard meals. And so I created this. (Imagine the sound of trumpets.) Very easy, filling and tasty and I'm sure I'll make it again sometime.

I'm not good with the measurement, but most things are common sensish like "How much Pasta do I want to eat?"

This is a very filling recipe that feeds about 4 or 5 people. It's basically up to you what vegetables you want to use, and of course you can leave out the meat, but I'm going to write down exactly what I used.

I'm on a study abroad program in Vienna, Austria this year, and one of the many things I have had to get used to is cooking for myself; unlike my home college, the university here does not have any sort of meal plan (my home college actually require it for most students) and so I was suddenly having to make my own meals. I did not want to survive on cold cereal and sandwiches, so I taught myself how to make a few things. One of them was stir-fry, and it's become one of my favorite things to make. The ingredients are simple and very flexible, it's a wonderful way to get rid of leftovers, and once you get the hang of it you make make yourself some lunch in 15 minutes or less.

On February 2nd, French people celebrate the "Chandeleur", ie Candlemas. It was initially a Christian holiday, but today it's mostly remembered because it's Crêpe Day.

There are a lot of superstitions associated with crêpes. They should be tossed with the right hand while holding a coin in the left hand, so that prosperity is guaranteed all year long. The first crêpe should be tossed atop the wardrobe so that recolts are plentiful.

Crêpes are similar to pancakes, but they should be cooked very thin and on a crêpière, a very shallow and flat pan, about 10" wide.
