Amish Sour Cream Apple Pie

Amish Sour Cream Apple Pie

1 c. sour cream
1 egg
3/4 c. sugar
2 tbsp. flour
1/4 tsp. salt
1 tsp. vanilla
2-1/2 c. diced apples, peeled
1 unbaked 9-inch pie crust

Instructions:

Beat cream and egg together. Add flour, sugar, salt and vanilla. Mix until smooth. Stir in apples. Bake at 400 degrees for 25 minutes. Remove from oven and spread with crumb topping. Bake 20 more minutes.

CRUMB TOPPING:

1/2 c. brown sugar 1/4 c. butter 1/3 c. flour 1 tsp. cinnamon Mix until crumbly.

Pumpkin-Cranberry Bread & Butterbeer.

Here are two recipes for you. The first one was given to me by my mum, and the second was found whilst searching for a good butterbeer recipe, since all the other ones I've tried are no good. (^_^)

I used a saucepan. This is the best recipe I've tried using milk. I haven't tried any of the ones using rootbeer or cream soda.

Autumn Butter

1/4 cup firmly packed brown sugar
1 tsp pumpkin pie spice
1/4 cup whipping cream
1 cup butter, softened

Mix all ingredients until well blended.

Spiced Apple Sorbet

I just posted this recipe to my journal and thought it would be of interest since autumn is a time for nicely spiced apple things. :)

I wish I had had some fresh soft cider for this, but I don't live near an orchard any longer. :(

This is for a 6 quart ice cream maker, if you want amounts for 2, 4, or 5 quarts let me know and I'll add those.

6 c apple cider or juice (one can of concentrate and water to make 6 cups)
3 c sugar
1 tsp ground cloves (originally, 11/2 tsp whole cloves)
1 Tbsp ground cinnamon (originally 6 sticks)
6 c unsweetened applesauce (one 50 oz jar)
3 c cranberry juice (half of a can of concentrate and water to make 3 cups)
1/3 c lemon juice

Dissolve sugar in apple juice/cider, add spices and boil for 5 minutes. Remove whole spices. Add remaining ingredients and chill for at least one hour.

Freeze according to your machine's instructions.

Note, have containers that can hold about one gallon plus two cups handy for chilling the mix unless you are fortunate enough to have a fridge that can handle either the pot you mixed it in or your ice cream maker's canister. (I used a gallon jug and the empty applesauce jar.)

Recipe: Pumpkin Chocolate Chip Cookies

[info]serpenscript pointed me here, and I'm so glad she did! I love autumn.

I thought I'd share one of my favorite fall recipes, Pumpkin Chocolate Chip Cookies.

I start making these toward the end of October, and through November and December - friends start asking about them toward the end of September, all "You are making them this year, right??" *g*
